A summer soup.... when the weather is fine

Cucumber and Mint Gazpacho


1 large or 2 small cucumbers, peeled, deseeded and chopped

1 yellow pepper deseeded and chopped

2 garlic gloves, crushed

1 small avocado, peeled and chopped

Bunch spring onions, chopped small

Bunch mint, chopped

150ml natural yogurt

2 tbs white wine vinegar

Tabasco for seasoning

Handful of Chives, chopped


Add all ingredients to food processor (keep half the yogurt and mint aside)

Blend till smooth

Season with S&P and Tabasco

Chill till very cold before serving

Serve with spoonful of yogurt, mint and chives

Keeps for 2 days in fridge
