Beetroot Brownies
A sweet treat using beetroot
Ingredients
250g dark chocolate
200g unsalted butter
250g cooked beetroot ( boiled till soft)
3 eggs
1/2 teaspoon vanilla essence
200g golden caster sugar
50 g cocoa powder
50 g semolina
1 teaspoon baking powder
100g desiccated coconut
Method
Oven set to 180C
Melt chocolate with buttering a bowl over hot water
Add beetroot to food processor and blitz to a puree
Beat eggs, vanilla and sugar gently
Mix dry ingredients together
Fold beetroot into chocolate, fold in egg mixture then mixed dry ingredients
Line a 28x18 tin with baking parchment
Pour mixture into tin and level
Cook for 30-35 mins> should still have a 'springbuck' feeling
