Carrot, Courgette and Feta Flapjack.
…..An easy way to get the children to eat vegetables!!
80 g butter
100g grated carrot
100g grated courgette
100g feta cheese crumbled
2tsp chopped rosemary or thyme
1 tsp dried oregano
150g rolled oates
65g mixed seeds
2 eggs, beaten
Salt ( ½ teaspoon)
Preheat oven to 200C
Melt butter in a large pan
Remove from heat and stir in oats, salt, grated carrot and courgette
Add seeds, nuts and feta cheese. Season well with S&P and add herbs
Add beaten eggs and mix thoroughly
Lightly butter a swiss roll tin or use baking parchment and spoon mixture into the tin. Level with the back of a spoon.
Bake for 18-20 mins. Cool in tin and cut when cool but not cold.
