Chocolate courgette cake


180g dark chocolate (70%)

200g plain flour

1 tsp baking powder

½ tsp bicarb of soda

½ tsp salt

125 caster sugar

2 large eggs ( gently beaten)

170mls vegetable oil

225g peeled and grated courgette

60g walnuts or apricot pieces (optional)


Preheat oven to 180C

Melt chocolate gently over a bowl of hot water

Sift flour, baking powder, bicarb, salt and sugar into a bowl and set aside

Beat eggs into the oil gently but thoroughly

Add egg/oil mixture to dry ingredients

Add the melted chocolate and grated courgette

Stir to combine

Add nuts/apricots if desired

Pour into a lined 20cm round tin or 2lb loaf tin

Bake for 50 mins (check with a skewer cooked through)

Leave a few minutes in tin before turning out
