Courgette and Haloumi Cakes with Salsa

Courgette and Haloumi Cakes


300g grated courgettes ( mixed varieties if possible)

1 onion finely chopped

250g haloumi

chopped into small cubes

75g plain flour

Zest of a lemon

2 eggs

2tbs chopped dill

Oil to fry cakes


Grate courgettes coarsely- squeeze between paper towels to remove excess moisture

Combine courgettes, onions, haloumi, flour, lemon zest, eggs and dill

Make 6-8 rounds then flatten slightly

Set aside in the fridge to firm up for ½ hour

Fry in hot oil till brown on both sides.

Serve with salsa
