Kale 'Bubble and Squeak'
Kale “Bubble and Squeak” with Poached Egg and Spinach - a twist on a tried and tested recipe

Ingredients
1 onion peeled and chopped finely
8 large kale leaves (any variety, remove stocks and shred)
1 tsp cumin
½ tsp curry powder
400g mashed potato
Large handful spinach
Eggs
S&P
Method
Soften onion in a pain with a little oil
Stir in chopped kale stocks
Add spices and cook 2-3 mins
Stir in shredded kale, season and cover. The steam will cook the kale after a few minutes.
Allow this to cool
Mix potato with the kale mix, season and shape into small patties
Heat a little butter and oil till hot then fry the patties.
Serve with wilted spinach and poached egg
