Rhubarb Cordial... when you have had enough crumble this refreshing cordial works really well with
300g golden caster sugar
450g rhubarb, chopped
Zest and juice of 1 lemon
Zest and juice of 1 orange
Slice of peeled fresh root ginger
Add sugar to 300mls water and bring to a simmer until sugar dissolved
Add chopped rhubarb, ginger, juices and zest
Simmer until rhubarb ‘fallling apart’
Cool slightly then using muslin strain into a jug.
Can be kept in fridge for 1 month
Use 25mls per 100mls of diluting agent.
Especially nice chilled with anything fizzy..
